Flexi Flatbread

Yes, I have previously made flatbread, but the problem was that they cracked when I tried using them as a wrap. So I searched the internet for an easy peasy, quick recipe, as I find it tedious to cook or bake for very long, and found this one.
300g plain flour (didn’t have any so used self raising)
1 tsp salt
50 margarine or butter
185 ml milk
Heat the milk and margarine until it they melt together
In a bowl, add the above combination to the flour and salt and knead until you can create a smooth  sphere (if it’s too sticky keeping adding flour until you like the consistency)
Wrap in the sphere in cling film and allow it to stand for 30 minutes (do something to pass the time!)
After you’ve unwrapped your sphere cut it into 4 quarters then flatten and spread them out to as thin as you can.
Place an individual wrap in your cooking pan after oiling it and cook for between 1 and 2 minutes flipping alternatively until the surfaces show small golden spots.
Once cooled, fill your wraps with whatever delights your taste buds. Enjoy.

Orange Iced Muffins


As I have a taste for cake and orange flavouring I thought I’d combine the two and make some Orange Iced Muffins. Of course, the ingredients have to be something I normally buy plus the recipe has to be quick has to be easy for me, as I do find cooking a tad tedious. So I found this recipe online and it did the job, producing half a dozen tasty muffins ready for me to enjoy with a cup of tea (no. I didn’t eat them all at once.)
125 g butter softened
1/4 cup milk
1/4 cup orange juice
2 eggs
3/4 cup caster sugar
1 1/2 cups self-raising flour sifted
1 tbs orange zest finely grated
Orange icing
1/3 cup butter softened
1 1/2 cups icing sugar sifted
2 tbs orange juice *to taste
1/2 tsp orange zest finely grated
STEP 1.Combine all cake ingredients and beat thoroughly for 3 minutes.
STEP 2.Pour mixture into a greased 20cm x 10cm loaf or 20cm ring tin.
STEP 3.Bake in the centre of a 180C oven for 30-40 minutes.
STEP 4.Turn onto a wire rack and allow to cool.
STEP 5.Mix orange icing ingredients together in a bowl, then ice cake.
