Savoury Bread

This morning I attempted to make a kind of savoury bread in my machine using a pre-bought cheese and onion bread mix, which I‘ve previously baked. I added 2 teaspoons of dried onions and 4 teaspoons of red sun dried tomato pesto (you can add your own amounts). Followed the machine settings and let it cool. Cut off a couple of slices which tasted obviously of tomato with a hint of onion; nice, even more so, after being dipped in my asparagus cuppa soup. LOL!!

George’s Ginger Cookies

Recently I made these 11 gingerbread cookies (plus a gingerbread man) because I wanted to use up some of the many raw ginger roots and cinnamon sticks, I bought earlier in the year.  Lucky for me, this was an easy recipe to follow and quick to cook. After peeling and grating the ginger root plus scraping the cinnamon stick to get the required amounts, I was ready to mix other the other ingredients.
65g butter or margarine
1.1/2 tablespoons honey
90g caster sugar
1 egg
1 teaspoon grated fresh root ginger
160g self-raising flour
2 pinches ground cinnamon
I heated the oven to 150 C / Gas 2. Line a baking tray with baking parchment.
The butter/margarine and honey were mixed together in the microwave until they melted together.  Then combined with the sugar, egg and ginger in a large mixing bowl.
The flour and cinnamon was then combined with the mixture, until it became a kind of rubbery texture (you may have to add more flour it it’s too sticky). This rounded mixture was onto a floured board, kneaded lightly and rolled out to about 5mm thick. I just used a beer glass to cut out circles and placed on the prepared tray.
Baked 6 to 8 minutes in the preheated oven until lightly golden. Once baked, they were left  on a wire tray to cool. Later, tried one with a cup of tea and it melted away in my mouth.  Very nice. Then ate the man, head first!
 

Wholemeal Banana Bread

This time I didn’t use my bread machine but my oven instead. This was a wholemeal bread mix which could either be a vegan or standard recipe depending on the ingredients; actually an egg or not. As I didn’t have any eggs I made an alternative version. Which consisted of 3 mashed bananas, 40g of margarine (butter or dairy spread can be used instead) plus a pinch of cinnamon. These were added to the pre-bought mix and the resulting mixture was spooned into a greaseproof-paper lined oblong bowl.  After baking for 25 minutes at gas mark 6 and checking that the top was browned, I covered the bowl with foil and baked for another 20 minutes.  While still just warm, I sliced and tasted the result. Mmmm. Lush! Later, after it had cooled completely and it still tasted lovely.
